A Recipe from the Past & a Castle in 2019!

(Be sure to read all the way to the bottom for a castle surprise!)

Yesterday, I looked through my many newspaper clippings for recipes for an upcoming dinner party. I stumbled upon some that had belonged to my mother-in-law (from 1970...almost 50 years ago!) and got a kick out of reading through them.  Here's one, just as a For Example:

The Graham Cracker Cake sounds easy enough to try!  
GRAHAM CRACKER CAKE

1 lb. box graham crackers, crushed fine.

4 eggs
2 c. sugar
2 c. pecans, chopped
2 c. raisins
1 c. milk
1/4 lb butter
1 Tbsp vanilla flavoring

Cream butter and sugar. Add milk and flavoring. Add crackers, raisins and pecans. Mix well.  Bake in well-greased cake pan for 1 hr or until done at 350 degrees.

My most astute readers will have noticed that, although the eggs show up in the list of ingredients, it doesn't mention WHEN to add them.  :)

Slaw with a Zac Brown Kick

Please indulge me.  I don't usually post recipes, but, since it's Labor Day, I figured a good slaw recipe was in order!  I'm serving this with a slow cooked BBQ pork and some homemade sweet potato chips!  It's smelling good around here!


ZAC BROWN BAND COLESLAW

Ingredients
  • 1 head Green Cabbage
  • 1 large Green Bell Pepper
  • 8 stalks Green Onion
  • 2 ripe Tomatoes
or, use prepackaged cole slaw like I did today - I used 1/2 bag which is enough for 3+ people.

Slaw Dressing:  (this is the divine part!) - I made one-fourth this amount (good for 3+ people).
  • 2 cups Mayonnaise
  • 2 tablespoons Hot Horseradish
  • 2 tablespoons Yellow Mustard
  • 1 tablespoon White Sugar
  • 1/2 cup White Vinegar
  • 1/2 teaspoon Cayenne Pepper - No, this doesn't make it too spicy.
  • 1/2 teaspoon fine Ground Black Pepper
  • 1 teaspoon Kosher Salt
Preparation
Dice all veggies to 1/4 inch dice. Add 1/2 of the slaw dressing and add more as needed. Save some of the diced tomatoes as garnish.

Diet leads to best fish recipe ever

I need to lose a few pounds.  Okay, maybe more than a few.  To "spice up" my life while dieting, I figured I'd look for new and interesting recipes.  Do you have any for me?

Well, I've got one for you!  You can use any form of mild fish like catfish, etc.

SEASONED, BAKED FISH FILLETS

4 (4 oz) fish fillets 
2 Tbsp. butter (or margarine)
¼ c. dry white wine
1 Tbsp. lemon juice
1 Tbsp chopped cilantro (optional - I didn't have any, but I think this would have really topped it all off nicely)
1 tsp. minced garlic
1 tsp. Salt
1 tsp. ground black pepper
1 tsp. paprika (NOT cayenne unless you love the heat)
Preheat oven to 350 degrees.
Spray shallow pan with cooking spray (I used foil in my pan for easy cleanup)
Heat margarine in saucepan over medium heat. Mix white wine, lemon juice, cilantro, garlic, salt and black pepper and paprika into melted margarine.
Simmer sauce for 2 minutes.Brush a little of this sauce into the bottom of the pan.
Lay the fillets into the pan.
Pour the rest of the sauce over the fillets.
Recipe calls for you to bake it 10-12 minutes (but for mine, I cooked it 15 minutes and then broiled for 2 more...depends on the thickness).

DELISH!!!  So moist!  So tasty!  (I wish now that I had thought to take a picture of it, but I'm not prone to photographing my dinners!).  I honestly think it's the paprika that's the magic ingredient in this one.

So, who's got a great recipe I can try on this diet!?  I'm game! (and please wish me luck...You know how when you're pregnant, all you see are pregnant women?  Well, all I see are food ads on TV at the most inappropriate times...basically all day long).
